I hate cinnamon. So many recipes, especially made with apples, have it, and A LOT of it. 1. Would the taste be just fine and

I hate cinnamon. So many recipes, especially made with apples, have it, and A LOT of it.
1. Would the taste be just fine and rich enough if I simply omit it? (For example, I wanted to make Apple Crisp Cups from this site.)

2. Any other spices I could use for an extra dimension that don’t taste or smell like cinnamon? :)
