Hi, Broccoli, cauliflower, leeks all go well with smoked fish. serve with lemon juice and/or this sauce. perfect for this. cheers.
Creamy Dill Sauce
1 heaped tsp Wholegrain Mustard;
1 heaped tsp Dijon Mustard;
75ml/2½ fl oz Extra Virgin Olive Oil;
1tbsp White Wine Vinegar;
1 to 2 tbsp (to taste) fresh Dill – finely chopped;
1tsp Hot Water.
Whisk the 2 mustards, sugar and salt in a bowl till well blended;
Pour the oil slowly and steadily into the bowl, whisking continually;
Continue until the mixture has thickened and approx half the oil has been added;
Slowly add the wine vinegar, still whisking and finally, continue slowly adding the rest of the oil, still whisking, until all has been added and the mixture emulsified smoothly;
Stir in the dill and the hot water.
