Good evening everyone, I had some ginger that I could use in a recipe so I decided to buy one lemon from the store and try to make some scones that would have some zip to them with the fresh ginger that will come through with lemon juice added instead of milk which did not deter the outcome of the scones. I only put one teaspoon of Baking Powder for 2 cups of flour which might have allowed them to not rise as much but they did come up some so I am wondering if 2 tsps. would be a good amount for this recipe. They almost resemble shortbread cookies so it might be a good idea to make the recipe with more baking powder. I will post the recipe for anyone who would like to save it to their recipe box.
Check out some of the scone recipes on AR to see how much leavening they use for 2 cups of flour. You definitely need more baking powder or maybe a combo of baking powder and baking soda. The acidity of the lemon juice may or may not affect the leavening–I’m not sure about this but it is something to consider.
