Chili? I am looking for a no bean chili recipe. I found 2 but have found tons with beans that have coffee in them. This sounds very good! I would love one that is like that but no beans. Also, can i sub out beer with more broth or should i use something else to sub the beer?
I’ve always thought beer was better WITH chili than IN it. Broth should work fine but I do like to add some really strong coffee to mine. I actually like beans in chili but I don’t make it that way. When I cook chili, I cook a pot of chili and a pot of pinto beans to keep from offending the chili purists. The ones who want beans can then just add them to their bowl. Not sure why you don’t want the kidney beans, but hey, that’s your choice!
Coffee will add to the taste (instant coffee grounds, in my opinion) and dark beer are good additions, nothing really subs for them. A spoon or two (to taste) of cocoa powder is another idea, but remember chili is one of those things meant to be cooked low and slow for hours and hours, if not days.
Could get into some philosphical things about using roughly cut and fatty beef chuck (Mexican method/cubed beef) or the Texan style fatty ground beef as a base…but its October, and the frost warnings have started, and the “chili season” has commenced.
The fiber offered by the beans offers the recipe a far better “healthy eating” (again in my own opinion) than just using tomato, celery, onions and peppers and such
