If I have chicken salad for supper rather than lunch, usually in the summer when hot, I usually do a duo, tri or quad plate. Salad greens all over the plate. A scoop of chicken salad & any other salad. A scoop of pasta salad, broccoli salad, green salad with dressing, fruit salad (grapes, strawberries, any fruit tossed with tiny bit of poppyseed dressing). A wedge of cheese. A wedge or two of hard boiled egg. Toasted bagette, crackers or croutons. A cold plate.
