This is very close to how I make shredded chicken (and pork!) for tacos. Seriously GOOD tacos!! You don’t need the cilantro and lime, but they’re great added RIGHT BEFORE SERVING. Do not add at the beginning. I use more taco seasoning, but that’s personal preference. I also rub the seasoning into the meat. Note that cooking time is off. For chicken, 4 hours on low is close to right, for pork loin or tenderloin, 6 hours on low. Makes enough to serve 8 for tacos.
