My fav Salvadorian restaurant serves fried yuca. LOVE it. It is lightly deep fried after boiling. I make at home but pan fry. Boil, cut into chunks, cool. While boiling the yuca put 2-3 T oil (more or less depending on how much yuca you have) in pan with lots of garlic, heat till warm to infuse oil. Cool. Strain out garlic pieces, reserve. Heat oil and pan fry the yuca till you get some crisp on all sides.
