Flash-blasting is a super-quick, high-heat preparation that cooks broccoli extra quick and coaxes out delicious caramelized flavors.
WARNING: The moment this blasted broccoli is cool enough to touch, you will stand at the kitchen counter eating it out of hand like a snack. No getting around it. It's just too tasty. So make lots.
- Preheat the oven to 500F. Place a baking sheet in the oven so the broccoli sizzles when it hits the sheet.
- After washing the broccoli, dry it as much as possible so the florets brown instead of steam.
- Cut the broccoli into florets. And go deep down the stems, cutting the stems into rounds.
- Stir up the broccoli with a splash of olive oil and some salt. Enough for a light coating, but you don't want the florets drenched and dripping with oil.
- Drop the broccoli onto the searing-hot sheet and cook at 500F for about 5 minutes. Remove from the oven, turn the broccoli, and cook for another 5 minutes or so, until the florets are beautifully browned in places and crunchy.
