Flash-Blasted Broccoli: The Quick Trick That Makes Broccoli Irresistible.

Flash-blasting is a super-quick, high-heat preparation that cooks broccoli extra quick and coaxes out delicious caramelized flavors.

WARNING: The moment this blasted broccoli is cool enough to touch, you will stand at the kitchen counter eating it out of hand like a snack. No getting around it. It's just too tasty. So make lots.

Flash-Blasted Broccoli: The Technique

  1. Preheat the oven to 500F. Place a baking sheet in the oven so the broccoli sizzles when it hits the sheet.
  2. After washing the broccoli, dry it as much as possible so the florets brown instead of steam.
  3. Cut the broccoli into florets. And go deep down the stems, cutting the stems into rounds.
  4. Stir up the broccoli with a splash of olive oil and some salt. Enough for a light coating, but you don't want the florets drenched and dripping with oil.
  5. Drop the broccoli onto the searing-hot sheet and cook at 500F for about 5 minutes. Remove from the oven, turn the broccoli, and cook for another 5 minutes or so, until the florets are beautifully browned in places and crunchy.

This flash-blasting method also works for cauliflower, asparagus, and carrots.
