A few years back, The New York Times published a pretty simple recipe for delicious peaches preserved in brandy.
Essentially, it’s blanched, peeled peaches briefly simmered in sugar water with brandy floated over the top of the gently cooked, jarred fruit. So simple.
All well and good and delicious, yes. But for our purposes, there is an incredible side benefit to this peach preservation project: Simmering the peaches in sugar water results in essentially peach-infused simple syrup.
"Why would this syrup not be amazing in cocktails?" we wondered. Why indeed.
So we bottled it up and have been making perfectly peachy Old Fashioneds with it. Like so:
Perfectly Peachy Old Fashioned Cocktail
- 1 tablespoon peach-infused simple syrup
- Splash of water
- 1 dash Angostura bitters
- 1 dash Fee Brothers Old Fashion Aromatic bitters (or just 2 dashes of Angostura bitters, but you might like the spiciness of the Fee Brothers Old Fashion bitters)
- 2 ounces rye whiskey or bourbon
- Twist of lemon
To make: Combine the simple syrup, splash of water, and bitters in an Old Fashioned glass. Add cracked ice and whiskey, and stir to combine. Add a twist of lemon.
