"Chakchouka (also called shakshouka) is a Tunisian and Israeli dish of tomatoes, onions, pepper, spices, and eggs," says Ben. "It is similar to the Turkish dish 'Menemen' and to the Latin American breakfast dish 'Huevos Rancheros.' It's usually eaten for breakfast or lunch, but I think it's tasty anytime. And it's easy to make."

"This saucy one-skillet chicken dish is full of tomatoes, spinach, olives and capers," says Breana Lai. "Try Kalamata olives in place of the green Sicilians or a combination of both."

Green beans simmer with pureed tomatoes and potatoes in healthy olive oil. In Greece, it's typically a main dish -- a great illustration of plant-based eating at its best! "Good crusty bread is essential for mopping up the sauce," says Diana Moutsopoulos, "and I always need to have a healthy chunk of feta on the side. Serve fasolakia warm or at room temperature for best flavor."
