Cauliflower pizza crusts are a great gluten-free option, but not always so much a good vegan option (recipes usually call for cheese or eggs). I'm vegan, so I was sort of unmoved to hear that Trader Joe’s is now carrying a pre-made frozen version. Until I read the ingredients: cauliflower, cornstarch, potato starch, olive oil, and salt. No cheese, no eggs! Well, now I’m excited, I thought. But is it good? I decided to give it a shot, and in a word: ohyeahhh.
It has a neutral flavor without being blah, and I’d describe the texture as slightly chewy, thin, crispy cornbread. I do think next time I’ll pre-bake it to get it as crispy as possible, because the edges were my favorite part. (Though, for the record, I think anything I was missing in the way of crispiness is 100 percent the fault of my oven—it’s not the best.) I baked mine for the full 15 minutes they suggest for a flatbread version, and could have gone for longer. My plan next time—and there will be a next time—is to pre-bake for 15 minutes, put the toppings on, then return it to the oven to heat the toppings for five minutes or so. I can’t imagine it would get too crispy. (I mean, is that even a thing??)
The cherry on top is that these crusts are pretty inexpensive - just $3.99 each, so it’ll be hard not to justify stocking up, which I suggest you do.
