Easy Vegan Appetizers

This trio of appetizers can be mostly prepped the day before so you can focus on the main dish on Thanksgiving day. Hold off on chopping veggies for the garlic bread until Thanksgiving morning (it won't take long!), but definitely stir together dip ingredients and stuff the mushrooms in advance so all that's left to do is pop both in the oven the day-of.

Veggie Delight on Garlic Bread

"This is a great recipe exactly as written, though I do always salt my eggplant first to make sure it's not bitter," says CARIST. She also finds the recipe to be very versatile: "I vary the amount of each vegetable based on what I have on hand, and it comes out great every time."

Tofu Turkey I

Allrecipes home cooks who've made this feast-worthy loaf recommend that you give the tofu plenty of time to get the excess moisture pressed out for best results.

jnoller shares these great tips: "I personally have had fabulous results every time I have made a Tofu Turkey. I press the tofu overnight the night so it really firms up. Then I hollow it out and add the stuffing. Once stuffed I then refrigerate it again for a few hours so it firms nicely and can be turned out into the cooking vessel. It's important to keep it covered with foil and keep marinating it often but COOK at low heat- I do it at 300 for about 2 hours so it won't burn."

Harvest Vegan Nut Roast

This savory loaf takes just 15 minutes of prep, then the oven does the rest of the work. Many recipe reviewers found it baked better in a shallow dish: luvmysigns says, "Instead of using the loaf pan, we put it in a round 9-inch cake pan. It ended up tasting like Turkey Stuffing from my pre-vegetarian days. This was a huge hit in our home (even with my super picky son)!"
